Word’s best steak 2021 from Atria farm in Karvia

Finnish grass-fed sirloin from Atria’s partner farm in Karvia was awarded the title of World’s Best Steak 2021 in the esteemed World Steak Challenge in Dublin. JN Meat International, Atria’s partner in Denmark, entered the competition with beef from the Finnish company and won the title for the third time in a row. It was a victory out of over 400 different steaks and 23 competitors.

Unique Breeding Conditions Guarantee Quality Meat

High-quality Finnish meat is not solely a product of well-planned and nutritious feeding. There is a unique breeding environment for cattle where they breathe in clean Nordic air and get the world’s most pristine water to drink. The amount of rain in Finland exceeds the evaporation point, resulting in the continual availability of clean, fresh water. There is a completely different set of circumstances in the rest of the world, where there is a shortage of drinking water, and using it for agricultural purposes notably raises the environmental footprint in non-Finnish meat production.

Atria works in close cooperation with its contract producers – family farms. There is extensive cooperation, and the producers will always receive assistance whenever needed, for example, in planning cattle feeding or developing breeding conditions. In addition to excellent breeding conditions, the health of the animals is very important. Family farms partnered with Atria belong to Naseva, the centralized health care register for Finnish cattle herds. Antibiotics are used in Finnish cattle farms only when there is a dire need for them, and there is zero tolerance for salmonella. The Atria production chain is transparent and can always be traced from the fields where the cattle graze to store shelves and, finally, to Muré’s tables.

Proven to be the best meat in the world

Finnish meat has been proven to be the best in the world. This has been verified on a worldwide scale, as Atria meat has won the title of World’s Best Steak in the World Steak Challenge in 2018, 2019 and 2021. The competition did not take place in 2020 due to the coronavirus pandemic.

After winning the World Steak Challenge for the second time in a row, even we were wondering how this happened again. One of the judges commented that we are perhaps so close to the product that we cannot see why our meat is so superb. The greatest factors are grass-fed cattle, clean water and excellent breeding conditions; these are the most important starting points that make Finland superior to many other countries. Everything truly sets off from the fine breeding conditions of the livestock, which also includes great healthcare for the animals.

We won the World Steak Challenge with ingredients from Atria in 2018, 2019 and 2021.

Criteria for Selecting Meat

The first and most important stage in selecting meat for Gastrogrill Muré is the work carried out at a slaughterhouse in Jyväskylä. There, the meat for our restaurant is separately evaluated, sorted and selected from other pieces in the average meat packing process. The sorters check for the marbling of each piece of meat, which can clearly be seen on the surface. It is the greatest factor in meat selection. The best, right-sized and visually appealing pieces are selected for Muré. Deliveries from the slaughterhouse to the restaurant take place every week: the meat on our diners’ plates is always the freshest of the fresh.

The meat at Muré is always put through a three-criteria evaluation which are our guidelines for the perfect dish: tenderness, marbling and intensity of flavour, each one given a grade on a scale from 1 to 10. According to what we are serving for the day, these criteria, along with the name of the farm the meat comes from, are written on chalkboards on the restaurant wall. If the meat or its producer changes during the day, we will quickly put the new information on the wall and update the criteria.

Craftsmanship is essential for the uncompromising care of quality and flavour of our food at every stage, and it is craftsmanship that is found at the core of what we do. For us, craftsmanship means truly respecting the work of the meat producer, the meat cutter, the meat grader, the cook and the server. At Muré, you can see and taste this craftsmanship, and it clearly shows the food’s journey from farms in cooperation with Atria right to your plate.
